Pavlova
- 200g sugar
- 600g berries (strawberries, raspberries)
- 568ml double cream
- 4 large eggs (white only)
- 2 tsp white wine vinegar
- 2 tsp vanilla extract
- 2 tsp cornstarch
- Preheat the oven to 120C fan.
- Whisk the egg whites to stiff peaks.
- Gradually whisk in the sugar. It should look like liquid marshmallow.
- Add the cornstarch, vanilla, and vinegar.
- Line a large baking sheet with non-stick parchment.
- Spread the mixture onto the parchment in a 20cm circle.
- Into the oven at 120C fan for 1 hour.
- Whip the cream until it's the desired stiffness.
- After an hour, turn off the oven and leave the merange to cool slowly.
- Remove the merange on place it on a flat plate.
- Spoon on the cream, and top with berries.

Sugar type
BBC recommends going half/half light muscovado and golden caster. I've always
just done it with white granulated sugar.
