Pavlova

  1. Preheat the oven to 120C fan.
  2. Whisk the egg whites to stiff peaks.
  3. Gradually whisk in the sugar. It should look like liquid marshmallow.
  4. Add the cornstarch, vanilla, and vinegar.
  5. Line a large baking sheet with non-stick parchment.
  6. Spread the mixture onto the parchment in a 20cm circle.
  7. Into the oven at 120C fan for 1 hour.
  8. Whip the cream until it's the desired stiffness.
  9. After an hour, turn off the oven and leave the merange to cool slowly.
  10. Remove the merange on place it on a flat plate.
  11. Spoon on the cream, and top with berries.

Sugar type

BBC recommends going half/half light muscovado and golden caster. I've always just done it with white granulated sugar.
