Toad in the Hole

Serves 4. You need:

Check you have plenty of milk (250 ml) and some lard/drippings in the freezer. Make the batter ahead of time and put it in the fridge to rest. Then:

  1. Put ~4 tbsp lard in the baking tray, into the oven at 200C fan.
  2. Fry up the sausage.
  3. Remove any lard rind from the tray, leaving just the fat.
  4. Place in the sausage, then pour over the batter. (The batter should come 3/4 the way up the sausage.)
  5. Tray back in oven for 30 mins.

Trimmings

  1. Slice carrots
  2. Boil for 5 mins
  3. Add the frozen peas
  4. Boil another 5 mins
